Monday's with Mia

The title sounds so wholesome. Makes me snicker.

This next recipe was a spur of the moment invention. I'm sure someone somewhere invented something like it, but this is mine and this is how I made it. Also, I have no idea what to call it. I invented a new soup, too, but there are no pictures. I'll try to remember next time I make "Fried Chicken Soup". No, don't ask me now. It's all about yum and so is this next one, especially if you like tomatoes.Ingredients:
Assorted Tomatoes (I used vine ripened standard, yellow grape, and grape)
1 ripe peach1/2 sm red onion.
1/4 c olive oil
3 oz fresh mozzarella (the real stuff)2 cloves of finely chopped garlic
1 Tbs stone ground mustard
1 Tbs balsamic vinegar
1 tsp crushed dried rosemary
salt
pepper
Start about half an hour before eating because the ingredients will create a lot of liquid that will complete the "dressing" of your salad. Freshly wash your tomatoes and peach. Slice the standard tomato and cut the other grape versions in half. Leave the seeds in. I like the seed.
Finely chop the onion and place in the bottom of your serving bowl along with: crushed dried rosemary (put it in your palm, crush it with the heel of your other hand to release the natural oils), stone ground mustard, garlic, and olive oil. Mix very well. It won't be pretty, but it will be yummy. Have I led you wrong yet? No. So listen to me, I know what I'm talking about.
Lay the slices of tomato in the mixture to marinate then pile in the other smaller tomatoes on top. Slice and cut up the peach into bite sized pieces and put them in too. Salt and pepper to taste. Next, cube FRESH mozzarella. There's a difference in the flavor. Don't cheap out on me and get processed crap. Throw the mozzarella in on top of the other ingredients.
About fifteen minutes before serving, toss the salad to mix in the dressing with the other items and let it rest. Do this once more before serving and check the combo to see if you have enough salt and pepper to compliment the salad.

Serve. Voila! I served this to my family one weekend when I was at Mom and Dad's. The exclaimed lots and Mom begged me to write this down for her. Plus, if you want to have this for a light meal, cube up some ham or turkey or chicken and put it in at the last minute.
